Ingredients
  

  • 3 pounds medium on-the-vine tomatoes
  • 2 tablespoons avocado oil
  • 1/3 cup finely minced shallot
  • 2 large garlic cloves finely minced
  • 1/2 teaspoon sea salt
  • freshly ground black pepper
  • 1 tablespoon tomato paste
  • 2 teaspoons balsamic vinegar
  • 1/4 teaspoon cane sugar
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes
  • 1 sprig fresh basil

Instructions
 

  • Start by halving the juicy tomatoes and carefully scoop out all seeds. Hold them above a generous mixing bowl and grate the flesh against a box grater, leaving the skins behind.
  • In a medium-sized pot, warm the creamy avocado oil over low heat. Stir in the minced shallot, garlic, and sea salt, paired with freshly ground black pepper. Let it cook for about 3 minutes until the fragrance fills the air.
  • Mix in the grated tomatoes along with tomato paste, balsamic vinegar, sugar, cumin, red pepper flakes, and fresh basil. Cover and let it simmer gently on low heat for 30 minutes, stirring occasionally.
  • Remove the basil, taste, and adjust seasoning. The sauce should be rich and colorful, ready to enhance whatever dish you pair it with.
