Ingredients
  

  • 2-3 lb pork loin trimmed of excess fat
  • 2 tablespoons avocado oil
  • salt and pepper
  • 8 cloves garlic minced
  • 1/4 cup tamari
  • 1/2 cup brown sugar
  • 1 23.5 ounces can pineapple chunks with juice
  • 1/2 teaspoon ground ginger

Instructions
 

  • Trim the pork loin of any extra fat and season it with salt and pepper, ensuring an even coverage.
  • Place a large pan over medium-high heat, add avocado oil, and sear the pork loin for 2-4 minutes per side until it's golden and fragrant.
  • Transfer the seared pork into the slow cooker. Rub garlic over it and sprinkle with ground ginger. Pour tamari over and add the pineapple chunks along with their juice.
  • Sprinkle brown sugar evenly over the pork. Cover with the slow cooker lid and cook on low for 6 hours for sliceable tenderness.
  • For an extra tender, shred-ready pork, cook on low for 8-10 hours. Occasionally baste the pork with the juices using a ladle.
  • Serve the tender pork with its tangy juice for a delicious tropical meal!
