Ingredients
  

  • 2 lb chicken thighs boneless, skinless
  • 3 Tbsp fresh cilantro chopped for garnish
  • 3 green onions chopped for garnish
  • 20 oz can pineapple rings plus ¾ cup juice
  • 1/3 cup soy sauce low sodium preferred
  • 1 Tbsp avocado oil
  • 2 cloves garlic minced
  • 1 Tbsp fresh ginger minced
  • 3 Tbsp brown sugar
  • 1/3 cup ketchup
  • 2 tsp tomato paste
  • 1/2 tsp red pepper flakes
  • 1/2 tsp nutmeg
  • 1/4 tsp paprika
  • long grain white rice
  • avocado slices

Instructions
 

  • Whisk together soy sauce, brown sugar, garlic, ginger, pineapple juice, ketchup, and spices in a bowl, creating a fragrant marinade.
  • Pat the chicken dry and place it in a large ziplock bag. Pour half of the marinade over the chicken, ensuring each piece is coated. Refrigerate for at least 20 minutes to marinate.
  • Preheat the grill to medium heat. Brush and oil the grates to prevent sticking.
  • Heat the reserved marinade in a small saucepan until it thickens slightly, concentrating the flavors.
  • Grill the chicken until it is golden and cooked through, about 5-7 minutes per side. Serve with the thickened sauce drizzled over and garnish with cilantro and green onions.
