Ingredients
  

  • 20 oz cheese tortellini uncooked
  • 10 oz cherry tomatoes halved
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 4 garlic cloves minced
  • 3/4 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • balsamic glaze optional

Instructions
 

  • Bring a large pot of salted water to a boil and cook the cheese tortellini until they float, about 5 minutes.
  • Once cooked, drain the tortellini and rinse them under cold water to cool them off slightly.
  • In a large mixing bowl, combine the tortellini with chopped spinach, cherry tomatoes, mozzarella pearls, basil, and minced garlic.
  • Drizzle in the olive oil and balsamic vinegar, then season with Italian seasoning, salt, and pepper. Toss everything together gently.
  • Refrigerate the salad until you're ready to serve. Just before serving, give it a good toss and add a splash more olive oil if needed, finishing with balsamic glaze if desired.

Notes

Store any leftover salad in an airtight container in the refrigerator for up to 5 days. The flavors meld beautifully over time, making it even tastier!
