  • 1 pound ripe beefsteak tomatoes halved crosswise
  • 0.25 medium red onion finely chopped
  • 1/2 cup fresh cilantro coarsely chopped
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon chipotle pepper finely chopped
  • 1 tablespoon chipotle adobo sauce plus more as needed
  • 1 tablespoon honey
  • 3 tablespoons avocado oil
  • 1 1/2 teaspoons kosher salt divided
  • 2 pounds skirt steak

Instructions
 

  • Using a box grater, grate the flesh of the halved tomatoes into a bowl, savouring the fresh aroma as the juices collect beneath. Discard the skins.
  • Mix in the chopped onion, cilantro, lime juice, chipotle pepper, adobo sauce, honey, and 3/4 teaspoon salt, stirring until flavors meld.
  • Season the skirt steak with the remaining salt. Let it rest as you preheat your grill to a scorching 500°F.
  • Grill the steak on high heat, capturing those picturesque grill marks within 3 minutes. Flip and cook to desired doneness, between 2-4 minutes more.
  • After grilling, allow the steak to rest for 5 minutes. Slice against the grain to ensure tenderness, and top vigorously with the zesty tomato salsa.
