Ingredients
  

  • 1 pound boneless skinless chicken breasts cut into 1 inch pieces
  • 1/4 cup avocado oil
  • 1/3 cup soy sauce
  • 1/4 cup maple syrup
  • 1 teaspoon minced garlic
  • salt and pepper to taste
  • 1 red bell pepper cut into 1 inch pieces
  • 1 yellow bell pepper cut into 1 inch pieces
  • 2 small zucchini cut into 1 inch slices
  • 1 red onion cut into 1 inch pieces
  • 1 tablespoon chopped parsley

Instructions
 

  • Combine avocado oil, soy sauce, maple syrup, garlic, and a pinch of salt and pepper in a large bowl. Whisk until you have a silky marinade, aromatic and inviting.
  • Toss the chicken pieces, bell peppers, zucchini, and red onion in the marinade. Cover and let them soak up the flavors in the fridge for at least an hour.
  • While the flavors meld, soak your wooden skewers in cold water for 30 minutes, ensuring they won’t burn.
  • Heat up your grill to medium-high, and start threading the marinated chicken and veggies onto the skewers.
  • Grill each skewer for about 5-7 minutes per side, until the chicken is cooked through and the veggies are gently charred and tender.
  • Finish by sprinkling chopped parsley over the skewers. Serve hot, and watch everyone dig in with enthusiasm.
