Ingredients
  

  • 3 medium russet potatoes peeled and chopped
  • 1 pound lean ground beef
  • 1 tablespoon vegetable oil
  • 1 medium white onion diced
  • 2 teaspoons garlic minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 2.5 cups sharp cheddar cheese shredded

Instructions
 

  • Start by boiling the potatoes in water until they are tender but not mushy; this should take about 5 to 7 minutes.
  • In a large nonstick skillet over high heat, brown the ground beef until it’s completely cooked through, then drain the fat.
  • In the same skillet, lower the heat to medium and add the oil, onion, garlic, potatoes, and seasonings. Toss everything well, allowing the flavors to meld and the onions to become translucent.
  • Once the potatoes and onions are starting to brown, incorporate the cooked ground beef back into the skillet.
  • Finally, sprinkle the cheese over the mixture and stir until melted and everything is well combined.
