Ingredients
  

  • 1 lb Boneless skinless chicken breast
  • 2 tbsp Extra virgin olive oil
  • 1 large Red bell pepper thinly sliced
  • 2 large Carrots shredded
  • 3 stalks Green onions chopped
  • Salt to taste
  • Black pepper to taste
  • 1 cup Bang Bang sauce homemade or store-bought
  • 1/4 cup Fresh cilantro chopped

Instructions
 

  • Wash and prepare the vegetables: thinly slice the red bell pepper, shred the carrots, and chop the green onions and cilantro. Set aside.
  • Pat the chicken breasts dry with a paper towel. Rub all over with olive oil and season generously with salt and black pepper.
  • If grilling, preheat grill to medium-high heat. Place chicken on grates and cook 6 to 8 minutes per side until charred and cooked through. If pan-searing, heat skillet over medium-high with olive oil and cook chicken 5 to 7 minutes per side until golden brown. Use an instant-read thermometer to ensure chicken reaches 165°F (74°C).
  • Transfer chicken to a cutting board and let rest for 5 minutes to redistribute the juices. Slice against the grain into strips.
  • Divide the bell peppers, shredded carrots, and green onions among four bowls. Top with sliced chicken, drizzle generously with Bang Bang sauce, and garnish with fresh cilantro. Serve immediately.
