This sweet and savory Grilled Hawaiian Huli Huli Chicken is a summer cookout favorite, infused with tropical flavors and grilled with care.

Ingredients
  

  • 4 pounds boneless chicken thighs or bone-in
  • 1/2 cup light brown sugar packed
  • 1/2 cup ketchup
  • 1 cup canned pineapple juice not fresh
  • 1/2 cup light soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon ground ginger
  • 4 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • fresh pineapple slices to serve
  • avocado oil for the grill
  • sliced green onions for garnish

Instructions
 

  • In a large resealable bag, combine brown sugar, ketchup, pineapple juice, soy sauce, Worcestershire sauce, vinegar, ginger, garlic, smoked paprika, and black pepper until mixed well.
  • Set aside 1/2 cup of this mixture in the fridge for brushing during grilling.
  • Place chicken thighs into the bag, ensuring they're fully covered. Seal and chill for at least 4 hours, ideally overnight.
  • Before grilling, let the chicken rest at room temperature for 20-30 minutes. Preheat the grill and coat grates with oil.
  • Grill for 6 minutes on each side, then brush with reserved marinade. Continue cooking, flipping every 2 minutes, until thoroughly cooked.
  • Grill pineapple slices until they have clear grill marks and are easy to turn.
  • Serve chicken topped with grilled pineapple and green onions.

Notes

For best results, marinate the chicken overnight. Feel free to bake at 375°F for 30-35 minutes if preferred.
