  • 2.25 cups cucumbers partially peeled and diced
  • 1 cup tomato seeded and diced
  • 0.25 cup red onion diced
  • 2 tablespoons fresh lemon juice
  • 0.5 tablespoons fresh parsley minced
  • 1 tablespoon extra virgin olive oil
  • 0.5 teaspoon kosher salt and black pepper to taste
  • 15 ounces chickpeas rinsed and drained
