Ingredients
  

  • 0.5 cup plain yogurt full fat
  • 1 tbsp lemon juice
  • 1 tsp turmeric powder
  • 2 tsp garam masala
  • 0.5 tsp cayenne pepper or chili powder
  • 1 tsp ground cumin
  • 1 tbsp grated ginger fresh
  • 2 cloves garlic crushed
  • 1.5 lb chicken thigh fillets cut into bite-sized pieces
  • 2 tbsp ghee or butter, or 1 tbsp vegetable oil
  • 1 cup tomato passata aka tomato puree
  • 1 cup heavy cream or thickened cream
  • 1 tbsp sugar
  • 1.25 tsp salt
  • cups basmati rice for serving
  • cups cilantro optional, for garnish

Instructions
 

  • For a creamier sauce, mix the marinade ingredients—yogurt, lemon juice, and spices—together in a bowl. It smells amazing!
  • Combine the marinade with the chicken pieces. Cover and let it rest in the fridge for at least 3 hours, or overnight for the best flavor.
  • In a large frying pan, heat the ghee over high heat. Add the chicken straight from the marinade; don't wipe it off, as the spices cling beautifully.
  • Cook the chicken for about 3 minutes until it turns opaque; it will not brown fully due to the marinade.
  • Stir in the tomato passata, heavy cream, sugar, and salt. Let the sauce simmer on low for 20 minutes, enhancing the aroma in your kitchen.
  • Serve warm, garnished with cilantro if desired, alongside fragrant basmati rice.
